
Pineapple Fried Rice

Ingredients
- 2 tbsp oil
- 12 oz sausage, sliced
- 3 cups cooked rice (preferably chilled)
- 1 cup pineapple chunks
- 1/2 cup diced bell pepper
- 1/2 cup peas
- 2 green onions, sliced
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce (optional)
- 1 tsp sesame oil
- Salt and black pepper to taste
- Fresh cilantro or green onion for garnish
Directions
- Heat oil in a large skillet or wok over medium-high heat.
- Add sliced sausage and cook until browned. Remove and set aside.
- Add garlic and bell pepper to the skillet. Cook for 1–2 minutes.
- Stir in rice, breaking up any clumps, and cook for 3–4 minutes.
- Add pineapple, peas, cooked sausage, soy sauce, and oyster sauce. Stir well.
- Drizzle with sesame oil and toss everything together until heated through.
- Season with salt and black pepper as needed.
- Garnish with green onions or cilantro and serve warm.
