Hasselback Hot Link Breakfast Skillet

  1. Prepare the Hot Link Sausages by slicing 1/8” wide without slicing to through. We found the best way do this is to straddle the sausage with two chopsticks. When you slice the sausage, the chopsticks will act as a stop to prevent slicing through.

  2. Set up a cast iron skillet over medium heat. Add the olive oil and brown the sausages on all sides. Remove from the skillet, leaving the oil and fat from the sausages.

  3. Add 1 tbs butter and the sliced onions and pepper to the skillet. Sautee until cooked through and soft.

  4. Move the onions and peppers to the center of the skillet and return the sausages to the skillet, surrounding the onions and peppers.

  5. Add ½ tbs of butter to the center of the skillet, once melted, pour in 4 eggs. Reduce heat to low. Cover the skillet and allow the eggs to cook until your desired doneness (~2-3 minutes). Salt and pepper to taste.

  6. Garnish with sliced green onions and serve.


  1. 1 package of Evergood Louisiana Brand Hot Link Sausage
  2. 1 medium Sweet Onion (sliced ¼” strips)
  3. 1 Red Bell Pepper (cored and sliced in ¼” strips)
  4. 1 tbs Olive Oil
  5. 1 and ½ tbs Butter
  6. Salt and Pepper to taste
  7. Sliced Green Onions for garnish
