Hot Link Grits Bombs

Directions

  1. Prepare your grits according to package directions. When they are finished cooking, remove from the heat and add 1 cup of shredded cheese. Mix thoroughly. Allow the mixture to cool to a temperature you can handle, about 30 minutes.

  2. While the cheesy grits are cooling, dice the Hot Link Sausages and slice the green onions.

  3. When cooled, add the sausage, onions, salt, and pepper to the grit mixture. Mix well.

  4. Using a 2 oz scoop, scoop out balls of grits. Roll with your hands to make round. You should get 16-24 balls.

  5. Set up a dredging station, one bowl with the two eggs and water and another with the panko breadcrumbs.

  6. Roll each ball in the egg mixture and then in the panko breadcrumbs. Set on a rack over a sheet pan.

  7. When all are made, place them in the freezer, on the rack for 30 minutes.

  8. Heat 2 inches of oil over medium heat to 350℉ in a cast iron pan or dutch oven.

  9. Place six breaded grit balls in the oil at a time and fry, rotating at least once until golden brown.

  10. Remove from the oil and drain on a cooling rack.

  11. Repeat until all are fried.

  12. Serve and enjoy.

Ingredients

  1. 1 package Evergood Louisiana Brand Hot Link sausages (diced ¼”)
  2. 2 cups of Grits (prepare according to package directions)
  3. ½ cup Cheese Spread (pick your favorite- can be spicy if you like the heat)
  4. ¼ cup sliced Green Onion
  5. 2 egg (beaten)
  6. 1 tbs Water
  7. 2 cups Panko Breadcrumbs
  8. Salt and Pepper to taste
  9. Oil for frying (canola, vegetable, or peanut)
