Khachapuri with Garlic Sausages

Prep Time: 1 hour Cook Time: 15-30 mins


  1. Preheat the oven, with a baking steel or pizza stone in place, to 500 degrees. Allow to preheat for 1 hour to bring the steel or stone to temp.

  2. While the steel or stone is preheating, mix the muenster and goat cheeses with, 2 beaten eggs, the Garlic Sausage coins, salt, and pepper in a medium bowl.

  3. Roll out the pizza dough onto a piece of parchment paper.

  4. Add the sausage and cheese mixture to the center. Roll the pizza dough around the mixture to form a boat, twisting the ends to keep it contained.

  5. Mix 1 beaten egg with water. With this egg wash mixture brush the dough surface.

  6. Trim the excess parchment paper to about 1 inch around the khachapuri.

  7. Transfer the Khachapuri, with the parchment paper, to the oven onto the steel or stone with a pizza peel.

  8. Bake until golden brown. Remove from the oven.

  9. Allow to rest for 5 minutes before serving.


  1. 2 Evergood Garlic Sausages (sliced in ¼” coins)
  2. 1 ½ cups shredded Muenster Cheese
  3. ½ cup crumbled Goat Cheese
  4. 2 large Eggs (beaten)
  5. 1 canned Pizza Dough (can substitute your own homemade or store-bought dough (~400g))
  6. 1 large Egg (beaten)
  7. 1 tbs Water
  8. Salt and Pepper to taste
