Preheat the oven, with a baking steel or pizza stone in place, to 500 degrees. Allow to preheat for 1 hour to bring the steel or stone to temp.
While the steel or stone is preheating, mix the muenster and goat cheeses with, 2 beaten eggs, the Garlic Sausage coins, salt, and pepper in a medium bowl.
Roll out the pizza dough onto a piece of parchment paper.
Add the sausage and cheese mixture to the center. Roll the pizza dough around the mixture to form a boat, twisting the ends to keep it contained.
Mix 1 beaten egg with water. With this egg wash mixture brush the dough surface.
Trim the excess parchment paper to about 1 inch around the khachapuri.
Transfer the Khachapuri, with the parchment paper, to the oven onto the steel or stone with a pizza peel.
Bake until golden brown. Remove from the oven.
Allow to rest for 5 minutes before serving.
