Pineapple Sausages with Pancetta and Blue Cheese Dressing

Directions

  1. Setup grill for 2 zone grilling and light. Allow about 15 minutes to preheat to about 400°F.

  2. While the grill is preheating, dice your red onion. Set aside.

  3. Place a cast iron skillet on the direct side of the grill. Preheat to medium. Once preheated move the skillet to the edge of the direct/ indirect area of the grill. Toss in the pancetta. Stirring often, cook until done (about 5 minutes). Using a slotted spoon, remove the pancetta from the skillet and set aside.

  4. Place sausages on an indirect area of the grill. With the lid closed, allow the sausages to cook for about 4 minutes. Flip the sausages and cook for another 4 minutes.

  5. While the sausages cook, prepare the buns by brushing with mayonnaise.

  6. At this point, the sausages should be heated through to 160°F internally. Move sausages to a direct area of the grill. Moving and flipping the sausages often, grill them to your desired level of char or doneness. Remove the sausages from the grill.

  7. Place the rolls on the grill over direct heat to warm and toast to your desired doneness. Remove from the grill.

  8. Add the sausage to the bun and top with the chunky blue cheese dressing, diced red onions, and pancetta.

  9. Serve and enjoy.

  1. 1 package of Evergood Pineapple Sausages
  2. 4 oz diced Pancetta
  3. 1 small Red Onion
  4. ½ cup chunky Blue Cheese Dressing
  5. 4 hot dog or brat Buns
  6. 2 TBS mayonnaise
