Shrimp Stack

Prep Time: 30 mins Cook Time: 12 mins


  1. Setup grill for direct grilling and light. Allow about 20 minutes to preheat.

  2. While the grill is preheating, prepare the sausages, shrimp and avocado.

  3. Slice the sausages into ½” coins (about 8 pieces) and skewer.

  4. Skewer the shrimp and season with your favorite seasoning.

  5. Prepare the avocado. Slice in half, remove the pit. Brush the flesh with olive oil and season with your favorite seasoning.

  6. Place the avocado, flesh side down, over a direct area of the grill. After 30-60 seconds, turn the avocado halves ¼ turn. After 30 seconds move to the coolest area of the grill. This is just to lightly toast the avocado or add grill marks. Close the lid and allow to cook for 4 minutes. Remove from the grill.

  7. Grill the sausages and shrimp. Turn often to cook both sides of the sausage and shrimp. These will only take a few minutes. Cook the shrimp until it is opaque, and the sausages are cooked to your desired level of char or doneness. Remove the sausages and shrimp from the grill.

  8. Remove the avocado from the skins and mash. Add lemon juice and additional seasoning to taste. Mix well.

  9. Remove the sausages and shrimp from the skewers.

  10. Place the sausages flat on a serving tray, top each slice with a tsp of the avocado mix and a shrimp.

  11. Serve and enjoy.


  1. 1 package of Evergood Pineapple Sausages
  2. 32 small shrimp (peeled and deveined)
  3. 1 medium Avocado
  4. Olive oil
  5. Favorite BBQ Rub or Seasoning (try one with some heat to compliment the sweet of the sausage)
  6. 1 tbsp fresh squeezed Lemon juice
