Southwestern Mac N Cheese with Mango Sausage

Directions

  1. Heat the butter over medium high heat in a large saucepan.

  2. Add the onions and jalapeño and saute for 3 minutes.

  3. Add the milk, chili powder, cumin, garlic powder, and cornstarch and whisk until smooth. Bring to a boil and reduce heat to medium. Whisk until thick, about 3 minutes.

  4. Add the sour cream and cheese and whisk together until thick sauce forms and cheese is melted.

  5. Remove from the heat. Add pasta and toss.

  6. Divide the pasta into 4-6 bowls. Top with the sausage, beans, avocado, tomatoes, hot sauce and cilantro.

Ingredients

  1. 2 tbsp butter
  2. 1 onion, chopped
  3. 1 fresh jalapeño pepper, seeded, chopped
  4. 1 cup milk
  5. 1 tsp chipotle chili powder
  6. 1/2 tsp cumin
  7. 1/2 tsp garlic powder
  8. 1 tbsp cornstarch
  9. 1/2 cup sour cream
  10. 1 cup spicy cheddar jack cheese (or any cheddar)
  11. One 16 ounce package pasta shells, cooked
  12. 3 Spicy Mango sausage, sliced and sautéed for 2 minutes per side
  13. 1 can spicy black beans, drained and rinsed
  14. Avocado, tomatoes, hot sauce, and chopped cilantro for serving
