Cajun Rice, Spicy Shrimp and Sausage

Directions

  1. Add the shrimps to a medium bowl and toss with 1/2 tablespoon of Cajun seasoning. Set aside.

  2. Heat 1 tablespoon oil to a large pan over medium high heat. Add the onions and peppers and sauté for 3-5 minutes until soft.

  3. Add the salt and remaining Cajun seasoning and toss the spices with the veggies.

  4. Add the rice and sauté for one more minute.

  5. Add the broth, bring to a boil, then reduce to medium-low heat. Cover and allow to cook for about 18 minutes, until the liquid has been absorbed.

  6. While the rice is cooking, add the other tablespoon of oil to a separate sauté pan over medium-high heat. Add the sliced sausages and sauté for one minute.

  7. Add the shrimps and sauté for another 3-5 minutes, until shrimp is opaque and cooked through.

  8. Remove from heat, toss with the baby spinach.

  9. When the rice is done, scoop 1/2 cup rice on each plate and serve with the shrimp and sausage mixture and any veggie of choice. Serve with some cilantro and limes.

  1. 1 pound frozen, thawed shrimp
  2. 1 ½ tbsp Cajun seasoning, divided
  3. 2 tbsps oil, divided
  4. 1 medium onion chopped
  5. 1 large bell pepper, chopped
  6. 1/2 tsp salt
  7. 1 1/2 cups white rice
  8. 1 3/4 cups chicken broth (or veggie)
  9. 3 pineapple sausages, sliced
  10. 1/2 cup baby spinach
  11. Veggies of choice for serving
  12. Chopped Cilantro and sliced limes for serving
