Heat the butter or oil over medium high heat in a medium saucepan.
Add the onions, peppers, garlic, and carrots and sauté for about 3-4 minutes until softened.
Add the sausages and sauté for about 3 minutes.
Add the broth, crushed tomatoes, jalapeño, honey, chili powder, cumin, salt and pepper.
Mix together. Bring to a boil, then reduce heat to medium low.
Add the cilantro. Allow to simmer for 25-30 minutes.
Serve topped with avocado, fresh tomatoes, red onion, lime, and more cilantro.
