Sausage and Grated Egg Breakfast Plate

Directions

  1. Heat a grill pan over medium high. Add the sausage to the pan and grill, sliced side down, for about 2 minutes. Flip and grill for another minute. Set on a plate.

  2. Using a grater, grate the hard boiled eggs into small pieces and set in a small bowl.

  3. Add arugula to a plate. Top with the tomatoes, avocado and red onion. Add the egg on top.

  4. Add the bread and grilled sausages and serve. Garnish with hemp seeds and red pepper flakes if using.

  1. 1 spicy sausage, sliced down the middle (lengthwise)
  2. 2 hard boiled egg
  3. 1/2 cup arugula
  4. 1/4 cup chopped tomatoes
  5. 1/4 avocado, sliced
  6. 2 slices red onion
  7. 2 slices sourdough, toasted, buttered and warm
  8. Red pepper flakes and hemp seeds for garnish (optional)
