Setup grill for 2 zone grilling and light. Allow about 20 minutes to preheat to 400℉.
While the grill is preheating, prepare the sausages by slicing in 2” pieces.
Grill the sausages over direct heat to brown on all sides. Remove from the grill.
Set a dutch oven on the grill directly over the coals. Add the water and 1 tbs of the seasoning to the dutch oven. Bring it to a boil. Add the sausage, potatoes, and corn. Cover the dutch oven and slide it to the indirect side of the grill.
Let this cook for about 40 minutes, until the potatoes are fork tender.
Add the shrimp and cook, with the lid on for another 5 minutes.
Remove the lid and add the butter, lemon juice, 2 tbs seafood rub, and salt. Mix all together until everything is coated with the seasoning and broth.
Dump out onto a large, rimmed, serving platter and sprinkle with the remaining seafood rub.
Serve with lemon wedges and plenty of napkins.
