Setup grill for 2 zone grilling and light. Allow about 15 minutes to preheat to about 400°F.
While the grill is preheating, slice the onions and peppers.
Set up a cast iron skillet over medium heat. Add the olive oil and brown the sausages on all sides. Remove from the skillet, leaving the oil and fat from the sausages.
Add 1 tbs butter and the sliced onions and peppers to the skillet. Sautee until cooked through and soft.
Move the onions and peppers to one side of the skillet and return the sausages to the skillet, surrounding the onions and peppers.
Add ½ tbs of butter to the open area of the skillet. Once the butter is melted, pour in 2 eggs. Move the skillet to the indirect area of the grill. Cover the skillet and allow the eggs to cook until your desired doneness (~2-3 minutes). Salt and pepper to taste.
