Heat a pan with the olive oil over medium high heat.
Add the sausages to the pan and sauté for 2 minutes per side. After, remove the sausages from the pan and set aside.
Add the frozen veggies to the same pan and sauté for about 3 minutes.
Add the rice to the pan and toss for about a minute. Season with the salt and pepper and toss again. Remove from heat and set aside.
Make the peanut sauce by whisking together the peanut butter and sweet chili sauce.
Divide the cooked rice into 4 bowls. Top each with equal amounts sausage, mango, avocado, cashews, sriracha and peanut sauce. Serve and enjoy!
